Monday's we're made for easy dinners... plain and simple. 

So happy to be reporting to you this Monday evening with a glass of prosecco in hand from the coziest spot on my couch. These last ten days have been CRAY. I literally have been spending every waking moment getting ready for that insane video shoot and then through a pizza party on Saturday. The phrase 'burning the candle at both ends' was all too real. Needless to say I was thrashed and was so happy to spend today working from my laptop at home on my couch. One of the endless perks of working from home. 

The whole weekend was actually nice I was just really thrashed to enjoy it fully. Unfortunately, on Saturday I was just doing too many things at once and burned a good three inches of my hair on our new pizza oven. Totally my fault. The next day I was left with a pretty short hair cut to get out all of the burned bits. Honestly, it was quite traumatic but I did my best to 'walk it off'.

I couldn't be more excited for a slower three days around here. I've got a few client shoots this week and then we are spending the weekend hosting one of our friends from summer camp and his girlfriend for the weekend. Our friend Brent is arguably the reason Jared and I are together today. He is a big old 6'4 teddy bear and one of our closest friends. If Jared and I actually get married one day, I'm certain Brent will be in our wedding. We've got a Disney day planned and a Warner Brothers backlot tour for a little Los Angeles tourism charm.

Considering tonight is going to be the most relaxing and chill of the week (Abbie is coming over tomorrow for a big creative project brainstorm!) I figure we would do a very easy but delicious dinner recipe! On cozy nights like tonight, this is usually what our dinner looks like between the two of us. 

Last month, my sheet pan chicken chili lime fajitas were like on the top three viewed recipe list on the blog. Guys, I made these fajitas LAST SPRING! And you guys are still totally into them. When I see numbers like this there really is only thing I can do. Give the people what they want! So I am! I am switching up the flavor notch though! Similar concept but with an asian zing. I will tell you though... I'm not sure which sheet pan dinner I like more... You'll have to find out for yourself!

This one is loaded with fresh veggies and pocketed with a salmon filet covered in a rich garlic and ginger glaze. The glaze part of the recipe is seriously so easy and comes together in less than five minutes! It is an amazing base for the whole dish and provides so much flavor! My goal with these sheet pan dinner is to bring you guys an easy, but gourmet tasting dinner in less than an hour. If you're getting into cooking or just looking for an easy dinner give them a try! If you like asian cuisine at home, you're going to love them! I love serving up this asian sheet pan dinner with brown rice and edamame beans but if you're looking for a low carb option you could totally omit the rice and add a fresh salad or double up on the veggies!

Asian Ginger & Garlic Salmon Sheet Pan Dinner

1/3 cup of soy sauce (low sodium is k!)
1/4 of Water
5 garlic cloves, minced
1 teaspoon of grated fresh ginger
2 teaspoons of honey
Juice of half a lime
1 Tablespoon of corn starch
2 Teaspoons of sesame oil
3-4 Salmon Filets
1-2 Tablespoons of olive oil
1 Red bell pepper, diced
1 Yellow bell pepper, diced
1 Red onion, diced
1 Small bunch of broccolini
6 Small carrots, halved
1 Cup of edamame beans, shelled
1/4 Cup of chopped green onions
Serve with sesame seeds, brown rice and edamame beans!   

Whisk together soy sauce, water, garlic, ginger, honey, lime juice, sesame oil and cornstarch to a small sauce pan and turn on medium heat. Cook for 2-3 minutes until mixture begins to simmer. One mixture begins to simmer whisk every 30 seconds or so. Mixture will begin to bubble and thicken. Once mixture thickens enough to coat the back of a spoon, remove from heat. Use 1/3 of asian ginger garlic mixture to spread evenly over salmon filets. Allow salmon filets to marinate at room temp (15-20 mins) while preparing vegetables.  

Preheat oven to 425 degrees  
Add all veggies to a large sheet pan and toss with olive oil and 1/3 cup of asian ginger garlic mixture (reserve rest for dipping once sheet pan dinner is finished!). Cook for 10-12 minutes. Remove sheet pan and make 3-4 'pockets' for salmon filets. Place salmon filets onto sheet pan and continue to cook for 10-12 minutes or until salmon flakes off easily. Serve with the rest of the ginger garlic mixture, brown rice and edamame beans for a complete dinner :)
